You really can't learn all about lighting, audio, set construction, stage management and props by volunteering on an amateur theatre show. Both lighting and audio are vocations that involve life long learning as technology changes frequently. Not to say that people won't learn anything, just not all, infact probably closer to say hardly anything. Even doing a diploma in audio and lighting will only just give you a starting point to learn audio and lighting.
