I was wondering if anyone knew if there were any courses / workshops available for adults looking at learning puppetry. Cheers

Where in Australia are you?
If in Sydney, try Gary Friedman - he runs workshops for all kinds. www.puppetrynews.com. He's just started a range of puppetry lessons.
If in Melbourne - there are none really, unless you undertake VCA's course. That's a three year postgrad/masters (combined) in puppetry. Polyglot offers courses for children, but for adults they seem to run adult shows (with creative support) designed to allow puppeteers to test/workshop ideas.
If in Tas, I would approach Terrapin theatre.
If in WA, try Spare Parts Puppet Theatre. They're also holding the 2008 UNIMA Summit - an EXCELLENT thing to take part in if you are keen to wait that long.
Otherwise, I'm not sure where to go. The best info can be found by checking Puppetry News (above), Puppetry Australia (do a Google), or UNIMA Australia (also Google - the Aussie branch of the puppetry union). If you're really keen a $60-70 (don't quote me!) membership to UNIMA will get you involved with their activities, as well as receive national news on puppetry events.
Another idea is to visit www.puppetvision.blogspot.com. Puppetvision has a whole bunch of links to other puppetry sites and info.
